INGREDIENTS:
- 1 Tbs olive oil
- ½ cup chopped onion
- 3 cloves garlic, chopped finely
- 2 eggs, beaten
- ½ cup soft bread crumbs
- ½ cup tomato juice (or ketchup)
- 3 Tbs chopped flat-leaf parsley
- 1 tsp. dried oregano leaves (from the spice bottle)
- ¼ tsp salt
- 1/8 tsp black pepper
- ½ lbs pork sausage
- 1-1/2 lbs lean ground beef
- 8 thin slices ham
Optional (for those who don’t like cheese or are lactose intolerant like me).
- 1 cup shredded mozzarella cheese
- ½ cup shredded Havarti cheese
- ¼ cup grated parmesan cheese
HOW TO:
- Preheat oven to 350 degrees F.
- In small microwave-safe bowl combine olive oil, onion and garlic. Microwave on high for two minutes (until soft).
- In large bowl combine eggs, bread, tomato juice, spices (parsley-pepper) and onion mixture from microwave; mix well. Add sausage and ground beef and mix thoroughly.
- On a large piece of tin foil spread beef in rectangle. Lay slices of ham over meat, then spread cheese over ham (if you are adding cheese). Starting from the short end roll the beef (use the tinfoil to help lift and roll, but don’t roll in the tin foil). Once rolled gently place meatloaf, seam side down, in a pan that it will fit in.
- Bake for 70-80 minutes.
Serves 8.
