Mac & Cheese White Sauce



Ick I have a bad case of the hiccups. Usually I only hiccup twice and then it’s over but this is a constant nasty. I made Mac & Cheese tonight with a homemade white sauce cheese. I got a basic recipe from the net then made it my own like I usually do.


Mac & Cheese White Sauce


INGREDIENTS:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ teaspoon salt
  • 1 cup milk
  • White pepper
  • Shredded onion or Onion powder (a couple dashes)
  • To make yellow sauce add 1/2 cup to 1-1/2 cup cheddar cheese.


HOW TO:

  • Melt butter in a saucepan and whisk in flour and salt until smooth. Gradually stir in cold milk, cooking over direct heat and stirring constantly until sauce boils; reduce heat slightly and continue to stir until sauce becomes smooth and thick.
  • Stir in 1 cup shredded cheese until melted. Add two dashes of white pepper and as much shredded onion as you like (1/2 teaspoon is usually good).
  • When sauce thickens, simmer for an additional 10 minutes over very low heat, stirring occasionally.
  • Stir carefully to avoid lumps. If sauce becomes lumpy, use a stick blender or rotary beater to blend them out.
