Tacco Soup


INGREDIENTS:
1Tbsp Olive oil
1/4 onion diced 
1 chicken breast diced
1 14 oz can corn
1 14 oz can red enchilada sauce
1 cup Pace Mild Salsa
1 29 oz can black beans with liquid
1 cup nacho Doritos crushed
1/2 cup water
Dash of cinnamon
1 tsp cumin
1 tsp chili powder
Toppings:
Sour Cream
Shredded cheese
Corn Tortilla Chips
HOW TO:
Put olive oil in a big pot turned to medium heat.
Add diced onions and chicken. Cook till chicken is done.
Add the rest of the ingredients.
Mix.
Simmer for 1 hour.

Add a blob of sour cream, shredded cheese, and crushed chips.

Dinner Ideas

I was perusing for dinner ideas when I stumbled across this website. I’ve been trying out the recipes. So far I only have one disappointment. I wouldn’t recommend the tuna noodle casserole, but then my roommate liked it. So…to each their own?

Potato Salad

INGREDIENTS:

6 potatoes
6 eggs

Dressing Ingredients-
1 ¼ cup salad dressing
1tbs mustard
½ tsp salt
¼ tsp pepper
1/3 onion
1 cup celery
½ cup relish



HOW TO:

Potatoes-
Scrub/rinse potatoes (do not peel).
Set in large pot and fill with cold water.
Salt water 4/5 shakes.
Bring to boil then lower to a low boil.
Low boil for 20-25 minutes.
Pierce with fork to check if it is done.
Take out of water and set aside to cool.
Dice into cubes.

Eggs-
Set aside eggs.
Fill pan with water, bring to boil (salt).
Take egg on large spoon and gently place in water.
Do this one at a time.
Avoid cracking.
Boil for 10 minutes.
Take off heat set in sink and run cold water.
Once water is all cold no warm take out eggs.
Set aside to cool.
Dice into cubes.

Dressing-
Dice onions and celery.

To dice onions: cut onion in half, cut a half in half (you will end up with a quarter onion). Lay flat side down. Cut lines inward across onion. Cut horizontally. This gives you cubes.
To dice celery: Cut in thin strips long ways. Bunch together and cut short ways. This gives you cubes.

In large bowl combine ingredients.

Add potatoes. Mix well.
Add eggs. Mix lightly (you don’t want to eggs to get mushy).

Candied Almonds

INGREDIENTS:

• 1 cup granulated sugar
• 1 cup almonds
(or your preferred nut or mix of nuts)
• ½ tsp salt (optional)
• 1 tsp cinnamon (optional)
• 1 cup warm water


HOW TO:

• Mix sugar and water over medium heat until well mixed.
• Add the salt and cinnamon. Stir to mix.
• Add the raw almonds.
• Stir constantly over medium heat. The sugar will dissolve. This takes about twenty-five minutes.
• You can choose to pour the almonds onto a cookie sheet while in a glaze. If you go this route separate the almonds with two forks. You must act quickly.
• Second option is to wait until the glaze bursts into crystallized sugar. When this happens pour on baking pan and separate quickly.
• Let cool before eating. They taste better when they’re not hot.

Super Easy Rice & Chicken

INGREDIENTS:

  • Rice
  • 1 Chicken
  • 1 Tbs Soy Sauce
  • ½ tsp sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder


HOW TO:

  • Turn oven on to 450 F
  • In small baking pan add water and rice in ratio shown on bag
  • Add soy sauce and spices and sugar
  • Mix
  • Prepare chicken and soak both sides in water and rice
  • Bake for one hour

Easy Cream Baked Potatoe

INGREDIENTS:

  • 2 potatoes
  • 1 can cream of chicken
  • ½ cup chopped onion
  • ¼ lbs sausage
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • Dash of salt


HOW TO:

  • Wash and cut potatoes into squares (do not peel)
  • Cook sausage and break up
  • Push sausage to sides of pan and sate onions in sausage grease
  • Add cut up potatoes to mix in pan
  • Add spices and mix well
  • Put mix in bake pan
  • Mix can cream of chicken with water or milk till soupy’ish
  • Pour over potatoes
  • Bake at 450 for 1 hour or until potatoes are easily pierced by fork or knife

Cumin Chicken

INGREDIENTS:

  • ½ tsp black pepper
  • ½ tsp Garlic powder
  • ½ tsp basil leaf
  • ½ tsp cinnamon with sugar
  • ½ salt
  • ¼ tsp (for mild), or ½ tsp (for spicy) ground cumin
  • 1 tsp cocoa
  • 2 diced carrots
  • ¼ sliced onion
  • 1 chicken


HOW TO:

  • Mix spices together in baking pan.
  • Cover chicken in mixed spices on all sides, set aside.
  • Add carrots and onion to the mix.
  • Once carrots and onions are covered in spices, spread them out in pan.
  • Place chicken on top of vegetables.
  • Bake in 450 degrees F for 30 minutes.
  • Remove chicken and stir vegetables.
  • Flip chicken and replace; bake for an extra ten minutes.
